   Cake 101 - The Basics

   Each cake tier is composed of  4 layers of cake and 4 layers of fillings/buttercream.

   Then it is covered by buttercream and at this point either finished and decorated, or further covered with chocolate fondant and then finished and decorated.

   Fillings/Frostings can be citrus curds, jams or preserves, or buttercream.

   Buttercream is a light frosting made from butter, sugar, eggs and flavorings.  We only use pure butter in our buttercream, and use either a swiss or Italian meringue.  Flavorings can come from vanilla beans, curds, jams or liqueur.

   Fondant is a sugar paste covering and rolled like a thin dough to cover and decorate the cake.  It comes in various flavors like vanilla, chocolate and white chocolate. It's a very popular medium, that gets more popular everyday it is suitable for more elaborate sculpted decorations, and cakes that will be exposed to warm weather. 

   As much as the cake should be beautiful... It is very important to us that it taste great too.  

   That's why we use only the best ingredients, and make everything from
scratch.
